Join one of our guides on a short walk to Warehouse 16, The GlenAllachie’s traditional dunnage warehouse. Here, you’ll sample whiskies hand-selected by Master Distiller, Billy Walker – each chosen to illustrate the craft and care behind every bottle we make. The tasting concludes in the Visitor Centre with our hand-filled bottlings.

The GlenAllachie 11-year-old Palo Cortado Cask Matured is the rarest style of Sherry, combining the aromatic finesse of Amontillado with the structure and richness of Oloroso. It develops when the ‘flor’ yeast layer naturally fades on a wine that was initially intended to become a Fino.
This exceptional release boasts our signature sherry-forward profile, offering layers of cinnamon spice, butterscotch and damson plum, with notes of fresh brambles, treacle and chocolate.
The GlenAllachie 11-year-old Palo Cortado Cask Matured is the rarest style of Sherry, combining the aromatic finesse of Amontillado with the structure and richness of Oloroso. It develops when the ‘flor’ yeast layer naturally fades on a wine that was initially intended to become a Fino.

The first is The GlenAllachie 2003 Pedro Ximénez Sherry Puncheon Single Cask #40255. With only 597 bottles, this limited release is now available to purchase at The GlenAllachie Distillery and online at theglenallachie.com for those unable to attend but still wishing to celebrate the festival from afar.
Alongside this, we have selected two distinctive single casks exclusive to European markets, offering a taste of the festival’s spirit beyond its borders. The GlenAllachie 2015 Cask #9235, 10-year-old Oloroso Sherry Hogshead and Meikle Tòir 2019 Cask #12715, 6-year-old Oloroso Sherry Hogshead.
These limited releases are only available within European markets. They will not be offered at the distillery nor through our online store, making them a rare opportunity to experience something truly special.

In 2025, we enhanced our sustainability efforts with the installation of a Mechanical Vapour Recompression (MVR) system. Supported by the Scottish Industrial Energy Transformation Fund (SIETF), this technology captures and recycles waste heat from distillation, leading to more than a 50% reduction in energy consumption during wash distillation.
This first-of-its-kind system is expected to cut annual carbon emissions equivalent to the energy use of roughly 825 homes. We’re proud to be amongst the first distilleries in Scotland to install this technology as we march towards a greener future.
